Durian Cream Puff






Durian Cream :
1 small packet whipping cream (chilled)
Durian (about 10 with seeds removed and briefly creamed, chilled)


Use Cake mixer, beat whipping cream under high speed until a stiff peak forms.
Add creamed durians, and mix well. Chill until it sets.




Puff :
150 ml water
70 butter (room temperature)
80 gm high protein flour (sieved)
2 large eggs


1. In a pan, add in water and butter and slowly melt the butter under low heat. 
2. Once melted, bring to boil briefly and lower heat, add in flour. Continue to mix and mash under low heat until the dough stops sticking to the side of the pan.
3. Once ready, transfer dough to a mixing bowl and continue stir it with a wooden spoon for a minute or two to reduce its temperature.
4. Add in eggs one at a time and continue mixing until a paste is formed. 
5. On tray, springkle some some water over and place a baking sheet on top.
6. Pipe it onto the baking sheets (leave an inch in between) and bake it in preheated oven (gas oven 5-6) until golden brown. Should take about 20-30 minutes.
7. When its ready, place each onto a cooling tray and poke it once with a toothpick.
8. Once cooled, pipe in the durian cream or halve the puff and sandwich cream with puff. Chill it b4 serving.
9. If you have made extra puff, u may freeze it in airtight container.
